The art of preparing
“Sous-Vide” is the art of preparing vacuum-packed food at a low and constant temperature, to ensure that the inside is perfect without overcooking the outside, retaining moisture and flavours. Sous-Vide is very common in high end gastronomy as no other cooking method is able of obtaining such beautiful results in flavour, texture or colour.
At 55Degrees we are pioneers to combine organic food with the Sous-Vide method. Our 55Degrees kitchen is based in the old town of Javea in Spain, a beautiful place at the mediterranean sea surrounded by nature. For our recipes we only use organic products of excellent quality, most of which we exclusively get from our local organic farmers and markets on the coast between Valencia and Alicante.

We only chose organically grown vegetables and fruits from our region, meat and poultry from certified organic farms in Galicia and wild seafood from our local fish markets. Our wild salmon comes from Scotland.
All our dishes are delivered in the same BPA free vacuum bag in which they where cooked in. They can be served and savored immediately or be finished by you in order to create your own final plate and menu.
With our personalized catering proposal we guarantee the success of any event or celebration: parties, weddings, work meetings, business or private dinners... We can take over the complete organization and offer an exclusive and elegant setting.

Apart from being delicious, Sous-Vide products have multiple benefits and advantages compared to traditional cooked food: It is easier to digest and free of harmful substances which can be caused by overcooking at maximum heat for a prolonged time.
Our vacuum-packed organic food is prepared at a low and constant temperature (always lower than 100ºC) in hermetically heat resistant containers.
As cooked under vacuum, the food does not lose its minerals and vitamins as they cannot evaporate or get lost in the water which occurs with traditional cooking methods.
In addition, we only use selected ingredients of the highest quality as for example Himalayan salt which is highly valued for its purity and particular combination of minerals.
Claudia has always been interested in healthy nutrition and is constantly on the lookout for newest developments and findings. Born in Hamburg, she originally comes from the field of personal development. As a graduated psychologist and naturopathist she settled many years ago in Spain. Besides her therapeutic work she began to develop a passion for culinary arts which turned her over time into a specialist for Japanese cuisine. Being a true nature lover, she grows her own herbs and vegetables on a beautiful hilltop in Javea. At 55Degrees she is involved in all steps of the cooking process, from product selection to the creation of recipes. She also created a bouquet of signature dressings, based on finest olive oil and herbs.
We are Angel and Claudia
55Degrees is about Angel and Claudia and their passion for organic foods cooked using the Sous-Vide method.
In 1990 Angel studied at the Escola d'Hosteleria in Girona, Spain taught by the acclaimed chef Joan Roca. He became a contemporary student and embraced the creative avant-garde cuisine of Europe. He subsequently worked in top Michelin restaurants such as Le Grand Chalet in Switzerland, Raco de Can Fabes in Barcelona and the distinguished El Bulli in Girona. It was during this time that he discovered the fascination of Sous-Vide. He has since travelled extensively as a chef on exclusive private yachts as Perini Navi or Feadship, getting to know the distinct food cultures of every region he visited world-wide. This is what led him to perfect the art of Sous-Vide.

Our Sous-Vide products guarantee outstanding taste, quality and hygiene which in turn gives versatility in the kitchen. Our dishes are easy to process further and will help you save precious time. Sous-Vide allows cooked food to be stored while still sealed and refrigerated for a considerable length of time. All products are pasteurised, which increases the conservation time at least 3 times more.
Our organic products and ingredients are carefully selected. In our 55Degrees kitchen which is specially equipped and designed for preparing Sous-Vide, we are cooking each product at its specifically designated and controlled temperature and to the point that you receive a product which is outstanding in taste, texture and colour and ready for your further final own processing. All products come in the same BPA free vacuum bag in which they were cooked in.
